Make your own milk… What?

Recently I switched from dairy to non dairy milks to eradicate some long standing allergies and food sensitivities. This lead me down the road of trying all kind of nut milks, oat milk and coconut milk. The nut milks sort of baffled me, how can you make milk from almonds, brazil nuts, walnuts, pumpkin seeds… the list goes on. What is this wizardry? I decided to investigate and found that making milk from nuts and seeds is not only extremely easy but they are delicious too. The home-made stuff is far superior than the shop bought milks and much better for you.

My favourite so far is Brazil nut milk, its rich, creamy and naturally slightly sweet. It’s ridiculously easy to make at home. Trust me.

Brazil nut milk recipe:

Ingredients:

  • 1 packet of Brazil nuts

  • 4 cups of water

  • Pinch of pink Himalyan salt

Tools:

Action:

  • Put all the ingredients into a blender and blitz it up. I prefer to soak the nuts in water overnight, it softens them and leeches out some of the bitterness but that step is optional.

  • Strain through a sieve into a jug, work the pulp with a spoon to get the most liquid out of it.

  • Bottle it in a sterilised bottle or jug, refrigerate and use within 5 days. Your delicious homemade nut milk is made! EASY!

  • You can keep the pulp and use it to make cookies or a pastry base for pies. Or you can freeze it and figure out how to use it another time!
